Christmas Recipes from Ghana

  • 4 cups flour
  • 1 tablespoon butter or margarine
  • 6 ozs. sugar
  • A little nutmeg
  • A pinch of salt
  • 1 egg
  • 2 teaspoons of baking powder
  • A little milk
  • Oil for deep frying

Rub butter or margarine into flour, add baking powder, sugar and salt. Beat egg lightly. Add egg and enough milk to make a stiff dough.

Roll out on a floured board to 1/4 inch thick.

Cut into diamonds. Make a slit in the center of each diamond and twist it by passing one pointed end through the slit. Heat oil until smoking hot, fry cakes until golden brown.

Drain and serve with your favorite drink.
