Christmas Recipes from Hong Kong

  • 1 x 375g packet frozen ready-to-roll puff pastry, thawed
  • 125g marzipan
  • 250g ricotta cheese
  • 2 tablespoons caster sugar
  • 1 x 425g Blueberries, drained
  • 2 tablespoons caster sugar, extra
  • Pinch ground cinnamon
  • 2 tablespoons flaked almonds

1. Roll pastry into a 30 x 32cm rectangle, trim edges with a sharp knife and place onto a baking paper-lined baking slide.

2. Place half the marzipan into the bowl of a food processor and process with ricotta cheese and caster sugar until smooth.

3. Chop remaining marzipan with extra caster sugar and cinnamon. Mix with almonds, Sprinkle mixture over pastry.

4. Bake at 200C for 15-20 minutes, until puffed and golden brown. Serve warm, cut into squares. (Serves 12)
