Christmas Recipes from Latvia

  • 5 yolks
  • 150-200g sugar
  • 300g condensed milk (without sugar)
  • 100-200g vodka or alcohol+water
  • various essences (vanilla, rum, lemon, bitter orange, bitter almond etc.)
  • 2 teaspoons Riga Black Balsam

Cream together yolks, sugar and vanilla, dilute with milk little by little. Add an alcohol, and mix until the sugar has dissolved. Bottle and keep (let settle) 1-2 days in refrigerator. But can use also immediately.

Makes a bit more than 500 ml.

Note: This liquor is very light and aromatic, really the original “ladies’ drink”. Of course, can add to it more alcohol. The Egg Liquor in Latvia is prepared at any season.
