Christmas Recipes from Slovakia

  • 3 potatoes, pared, quartered and cut into thin slices
  • 3 tablespoons of Flour
  • 1/4 cup of shortening
  • 3 cups of water
  • 1 teaspoon salt
  • 3 cups milk
  • 1/4 cup chopped parsley
  • 1 egg, beaten

Melt shortening in a 2 or 3 quart saucepan. Add sliced potatoes an flour and cook over moderate heat until browned. Add water and salt and cook until potatoes are tender. Add milk and heat until boiling. Add parsley. Meanwhile, beat egg well. Add some of soup liquid and add to the rest of the soup. Do not boil.
